Beautiful sparkling rosé with great quality: beautiful smoky and broad scent, a hint of Mediterranean herbs, a touch of strawberries. Strong in taste with a subtle mousse. Fresh acidity, liveliness and bitters end in a wonderfully soft and rounded finale. Great for festive occasions, as an aperitif, nice with chicken salad, tapas, Iberico ham.
Monastrell is used to make this sparkling rosé. The juice of this blue grape is added to the classic, local grapes from the Penedes, macabeo, xarel.lo and parellada, which, like the monastrell, are grown biodynamically. Naturally, the monastrell is pressed after a short fermentation and only added in small quantities, 6%, to give the wine a beautiful light pink color. The monastrell is also harvested early, at the end of August, to preserve the good acidity, just like the macabeo. The monastrell gives the wine extra tension and elegance, it is a special discovery to use this grape for rosé. After slow fermentation in stainless steel, the base wine is composed from the different grapes. This base wine is then bottled with yeast and sugar to undergo the second fermentation. It then matures in the bottle for at least 15 months, developing beautiful small bubbles, resulting in a deliciously subtle sparkling rosé.
Raventós i Blanc was once a Cava producer, but left DO Cava in 2012 due to disagreements over quality. Since then they have used the name Conca del Riu Anoia, a very small geographical area between the Anoia and Foix rivers in the east of Penedes. Here Pepe Raventós makes top quality sparkling wines.
