Raventós i Blanc was once a Cava producer, but left DO Cava in 2012 due to disagreements over quality. Since then they have used the name Conca del Riu Anoia, a very small geographical area between the Anoia and Foix rivers in the east of Penedes. Here Pepe Raventós makes top quality sparkling wines.
Textures de Pedra is named after the original vineyard, which is located at the highest point of the domain, the Turó de Serral. Thanks to the stony soil there, vines have to root deeper to find water, which makes the grapes extra concentrated. The approach is completely biodynamic, with great respect for both soil and soil life. Textures de Pedra is a special blend of three local blue grape varieties: xarel lo vermell, bastard negre and sumoll. Perhaps not household names, but these are grape varieties that unmistakably belong to this area. After picking, the grapes are pressed and alcoholic fermentation takes place in concrete tanks. The fermentation of the grapes is carefully separated: not only is each grape variety fermented separately, but this is also done per soil type. The blend is then made and the wine bottled for the second fermentation. The wine then matures on the yeast cells for at least 48 months. This maturation on the yeast cells increases the complexity and provides aromas of brioche and nuts. The result is a beautiful sparkling wine with a rich structure and aromas of figs, citrus and nuts.
