Grilled Peach, Burrata & Prosciutto

A summer favourite, perfectly paired.
Some dishes only make sense for a few precious weeks each year. When peaches are perfectly ripe, burrata is at its creamy best and the barbecue is already warm, this salad is one of those recipes you'll find yourself making again and again. It looks wonderfully elegant, takes surprisingly little effort, and captures everything we love about relaxed summer dining.

Sweet peaches, silky burrata and delicate slices of prosciutto create a beautiful balance of sweetness, creaminess and savoury richness. A quick kiss from the grill caramelises the fruit's natural sugars, adding gentle smoky notes that lift the entire dish. Whether you're serving it as a light lunch in the garden, a starter before dinner or as part of a generous table of sharing dishes, this is summer on a plate.
Under The Grapevine Wine Pairing
This salad deserves wines with freshness rather than weight. Our favourite match is a crisp, mineral white with vibrant acidity. A Godello, elegant White Rioja or dry Chenin Blanc beautifully complements the creamy burrata while echoing the sweetness of the peaches. If you're opening bubbles, a quality Crémant, English Sparkling Wine or the Brut Nature Cava from Joan Sarda makes an exceptional partner. Their lively acidity refreshes the palate between each bite and adds a celebratory touch. For rosé lovers, choose a dry Provence-style rosé or a delicate Grenache-based rosé with plenty of freshness.
Ingredients (Serves 4)
3 ripe but firm peaches
2 burrata
80-100g thinly sliced Prosciutto di Parma
A generous handful of fresh basil
Extra virgin olive oil
White balsamic vinegar
Flaky sea salt
Freshly ground black pepper
Optional:
A handful of rocket (arugula)
Toasted pine nuts
A drizzle of balsamic glaze
Start cooking
1. Prepare the peaches
Slice each peach into quarters or sixths. Choose peaches that are ripe but still firm enough to hold their shape during grilling. Lightly coat the slices with olive oil and season with a little sea salt and freshly ground black pepper.
2. Grill
Heat your oven/grill to a direct high temperature of approximately 180–220°C.
Grill the peaches for around 3–4 minutes per side, until lightly caramelised with distinct grill marks while still retaining their shape. Transfer to a plate and allow them to cool for a few minutes.
3. Assemble
Arrange the grilled peaches across a serving platter. Tear the burrata into generous pieces and nestle them amongst the peaches. Drape the prosciutto naturally between the fruit and cheese before scattering over fresh basil leaves. Finish with a generous drizzle of extra virgin olive oil, a splash of white balsamic, flaky sea salt and freshly cracked black pepper. Serve immediately.

The magic of this dish lies in contrast. The peaches provide sweetness and gentle acidity.
The burrata brings luxurious creaminess without overpowering the fruit. Prosciutto contributes savoury depth and just enough salt to tie everything together, while fresh basil keeps the whole dish vibrant and aromatic. Simple ingredients, carefully chosen, rarely need much else.

One of the things we love at Under The Grapevine is looking beyond traditional food pairings. The creamy burrata softens bright acidity in wine, while the grilled peaches introduce gentle caramel notes that work beautifully with wines showing subtle stone fruit character. Fresh basil contributes herbal freshness, making wines with citrus, fennel or Mediterranean herb aromas particularly attractive. A finishing touch of freshly cracked black pepper adds just enough spice without dominating the dish.
Kitchen Tip
If peaches are slightly overripe, swap them for nectarines. Their firmer texture makes them easier to grill while offering a very similar flavour profile. Don't have burrata? Good-quality buffalo mozzarella or fresh ricotta also works beautifully.
