This Month's Cellar Selection by : Mike
"I taste hundreds of wines every year, but only a handful make me think, 'I would happily open this bottle for friends on a Friday evening.' Joan Sardà is one of those producers. Honest, beautifully made Cava that consistently overdelivers. It's exactly the kind of bottle I enjoy sharing with friends; and that's usually the highest compliment I can give a wine."

Joan Sardà, A Family Dedicated to Traditional Sparkling Wine
For generations, the Sardà family has been crafting sparkling wines in the heart of Catalonia. Working with carefully selected local grape varieties and the traditional method, every bottle reflects a commitment to patience, precision and authenticity. Rather than chasing trends, Joan Sardà focuses on producing elegant sparkling wines that express freshness, balance and a true sense of place. Extended ageing on the lees gives their wines remarkable complexity while maintaining the vibrant character that makes them such enjoyable companions at the table. This month we've selected two expressions that perfectly capture what we love about the estate: one beautifully crisp and mineral, the other vibrant, expressive and wonderfully food-friendly.
In the Glass
Joan Sardà Brut Nature Reserva
Bright, fresh and wonderfully precise, this traditional-method Cava is made without dosage, allowing the purity of the fruit and the complexity from extended ageing on the lees to shine through. Expect delicate aromas of citrus, green apple and white flowers, followed by hints of toasted brioche and almonds. The palate is dry, crisp and beautifully balanced with an elegant, persistent mousse. A sparkling wine that feels equally at home as an aperitif or alongside seafood, tapas and lighter dishes.

Drink or Cellar?
Ready to enjoy today, but equally capable of developing additional complexity over the next two to three years if stored in a cool, dark place. For the best experience, serve between 8-10°C and preferably in a white wine glass rather than a narrow flute. The wider bowl allows the wine's delicate aromas to develop beautifully.

Pan-fried Scallops with Pea Purée & Lemon Butter & Joan Sardà Brut Nature Reserva
The sweetness of perfectly seared scallops and fresh peas beautifully complements the crisp citrus fruit and fine mousse of the Brut Nature Reserva. A squeeze of lemon ties the dish effortlessly to the wine's vibrant acidity, creating a pairing that feels both elegant and uncomplicated.
In the Glass
Joan Sardà Brut Rosat
Delicate salmon pink in colour, this sparkling rosé offers inviting aromas of wild strawberries, raspberries and rose petals, supported by subtle hints of citrus peel and freshly baked pastry. The palate is lively and refreshing, balancing bright red fruit with crisp acidity and a fine mousse that carries through to a long, elegant finish.

Drink or Cellar
Enjoy now while its vibrant fruit is at its freshest. Although it will continue to drink beautifully over the next couple of years, this is a wine made to be shared and enjoyed. Serve lightly chilled 8-10°C in a white wine glass to allow its expressive aromas and delicate red fruit character to fully unfold.

Until next month's selection from our Cellar Collection
Every month we head into our cellar and choose one bottle we genuinely believe deserves your attention. Sometimes it's famous. Sometimes it's completely unknown. But it will always be a wine we'd happily pour for friends around our own table.
