What excites me most is that the world of sparkling wine has never stood still. While Champagne will always be the benchmark, exceptional sparkling wines are now being crafted in places that would have seemed unimaginable only a few decades ago. Not long ago I had the pleasure of tasting several sparkling wines from Brazil, and I was genuinely astonished by their freshness, precision and quality. Perhaps the region that excites me most, however, is England. There is something wonderfully fitting about the country that played such an important role in the early history of Champagne now producing some of the world's finest traditional-method sparkling wines in its own right. The quality being achieved today is nothing short of remarkable. I believe so strongly in English sparkling wine that I have become an ambassador for several of England's leading estates. Which ones? Why we love Sparkling Wines
Sparkling wine has an extraordinary ability to elevate even the simplest of occasions. While Champagne remains the benchmark, exceptional bottles are now being produced across the world, from the chalk soils of southern England to the rolling vineyards of Catalonia and the historic cellars of Alsace and the Loire Valley. At Under The Grapevine, we look beyond famous names and choose sparkling wines that offer genuine character, craftsmanship and outstanding value. Whether you're celebrating a milestone or simply enjoying an aperitif in the garden, there's a bottle here for every occasion.
The Traditional Method
Many of the world's finest sparkling wines are made using the Traditional Method (Méthode Traditionnelle), the same painstaking process that has been used in Champagne for centuries. After the base wine is bottled, a second fermentation takes place inside the bottle itself, naturally creating the delicate bubbles that give sparkling wine its elegance and finesse. Extended ageing on the lees adds layers of complexity, bringing notes of brioche, toasted nuts and freshly baked bread while maintaining freshness and precision.
Beyond Champagne
Champagne may be the most famous sparkling wine in the world, but it is far from the only region producing wines of remarkable quality. We are particularly passionate about the rise of English sparkling wine, whose cool climate and chalk-rich soils produce wines of exceptional purity and finesse. Alongside England, we carefully select traditional Cava from artisanal producers in Spain and elegant Crémant from some of France's most respected wine regions. Each offers its own distinctive personality while sharing the craftsmanship that defines great sparkling wine.
Food Pairing
Sparkling wine is one of the most versatile styles of wine at the table. The freshness and lively acidity make it a natural companion for oysters, shellfish, sushi and smoked salmon, while richer traditional-method wines pair beautifully with roast chicken, creamy risotto, soft cheeses and even fried dishes. The fine bubbles cleanse the palate between each bite, making sparkling wine an excellent choice from aperitif through to the main course.
Serving Sparkling Wine
For the best experience, serve most sparkling wines between 6°C and 8°C. Rather than narrow flutes, we recommend using a tulip-shaped sparkling wine glass or a quality white wine glass, allowing the aromas to develop while preserving the wine's delicate mousse. Always chill the bottle gradually and open it gently to retain as much freshness and effervescence as possible.
