Adega do Demo is a small, hands-on winery in the quiet village of Alongos, deep in Ribeiro’s rolling hills. Founded by Laura Rodríguez and Carlos Lorenzo, the project grew from their love of the land and traditional Galician viticulture. The couple farm their vineyards organically, placing a strong emphasis on healthy soils and minimal intervention in the cellar.
Their flagship white, Bitoku, combines predominantly Treixadura with a touch of Loureiro, both native grapes to the region that thrive on the slate and clay slopes overlooking the valley. The name Bitoku — inspired by a Japanese carp symbolising virtue — reflects Laura and Carlos’s belief that winemaking is guided by thoughtful care and deep respect for nature from vine to bottle.
