Daishichi Kimoto Umeshu
Daishichi Kimoto Umeshu is not your typical plum wine. This exquisite umeshu is made by steeping whole Japanese plums in Daishichi's traditionally brewed Kimoto Junmai sake, instead of using distilled alcohol or sugar syrup like most plum wines. The result is an authentic, balanced, and complex drink that offers the richness of ripe plums layered with the deep umami and natural acidity of high-quality sake. It’s smooth, gently sweet, and utterly refined—perfect as an aperitif or after-dinner drink.
Daishichi Brewery, founded in 1752 in Nihonmatsu (Fukushima), is internationally celebrated for its commitment to traditional sake craftsmanship. As a specialist in the Kimoto brewing method, Daishichi produces sake with exceptional structure, depth, and elegance. For this umeshu, they’ve applied the same artisanal care, using their Junmai sake as the base instead of neutral alcohol. The plums used are local and carefully selected, resulting in a liqueur that expresses both the natural fruit and the soul of the sake it’s infused with. This combination of tradition and innovation makes Daishichi Kimoto Umeshu truly one of a kind.
